My name is Jay Nir, also known as River Coyote. I provide consulting and interior design services specializing in Retail Food & Beverage, Hospitality Development and Operations. I provide in depth experience designing and implementing Hotel & Retail Concepts Nationwide- from the strategic and creative level down to the day-to-day operations.

In addition to running my design studio, I am currently working as a Design Consultant for Greenell Corp, where I design and build custom residential kitchens in New York, from Southampton to Brooklyn.

Previously I held the executive position of Director of Retail Experience & Development at Ollie.co, a Technology Based Hotel and Co-Living Property Operations Company, where I was responsible for planning, design, implementation, and operation of Ollie’s properties’ food and beverage, lobby and retail assets nationwide. In this role I successfully created a scalable retail food & beverage brand for the company - creating business plans, brand standards, budgets, staffing plans, standard operating procedures, design, and everything in between. I integrated my Cafe & Bar model into the lobby of hotels and residential developments nationwide as profitable experiential amenities. Starcity acquired Ollie Co-Living at the end of 2020, while I returned to specialized consulting and design - and roasting my own specialty coffee.

Prior to this Executive position at Ollie I opened and operated “River Coyote Wine & Coffee Bar” located at 121 Ludlow Street on the Lower East Side of Manhattan, NY.
